Ayurvedic Cleanse: Basic Khichardi Recipe

Do a cleanse to remove toxins, stagnation and more. Benefits include building a strong immune system and vital reserves, healthy digestion, prevention of sickness and more. Khichardi is a great staple during your cleanse. See below for a basic Khichardi recipe!

Prep: 20 minutes
Cook time: 30-45 minutes
Servings: 6-10


Ingredients:
2 cups basmati rice
1 cup split mung beans (dal)
2 tsp ghee
6 ½ cups water
1” grated fresh ginger
½ to 1 tsp. turmeric
½ to 1 tsp. cumin seed
¼ - ½  tsp. cardamom seed
½ to 1 tsp. fennel seed
1-2 tsp. salt
Leafy greens/veggies 

Directions:
1. Measure ingredients, grind any whole seeds (fennel, cumin, coriander, cardamom)
2. Wash and chop green beans and greens if adding
3. Rinse rice and mung beans in warm water and drain
4. Warm ghee in a large pot, add turmeric, fennel, cumin, coriander and cardamom
5. Stir and sauté on medium low for 2 minutes to release the properties of the spices
6. Warm/adjust heat so spices don’t burn. Add basmati rice and mung beans sauté for 3-4 min.
7. Add ginger, green beans and leafy greens (if adding). Stir and add 6 ½ cups of water
8. Bring to boil, add salt, cover lower heat to low and simmer 30 minutes
9. Check consistency after 30 min. (should be somewhat soupy) add more water if needed
10. Simmer for another 10 minutes. Add cardamom and cilantro to garnish, stir and enjoy!
